BBQ Pork Skewers

BBQ Pork Skewers with Squash Mash recipe is best when topped with 1-2 Servings of Lucy’s Red Hot CBD 


  • 1 lb pork tenderloin, cubed
  • 7 tbsp fresh cilantro, chopped
  • 4 tbsp fresh basil, chopped
  • 2 garlic cloves
  • juice of 1/2 a lemon
  • 4 tbsp caper
  • 2/3 cup olive oil
  • 1/2 tbsp sugar-free BBQ sauce
  • 1/2 cup butter
  • 3 cups butternut squash, cubed
  • 2 oz grated Parmesan
  • 1-2 Servings of CBD Chili Oil


In a blender, add cilantro, basil, garlic, lemon juice, capers, olive oil, salt, and pepper and process until smooth. Set aside the salsa verde. Thread pork cubes on skewers. Season with salt and pepper and brush with BBQ sauce.

Melt 1 tbsp butter in a grill pan and sear the skewers until golden brown on both sides; remove to a plate. Pour squash into a pot, add some salted water, and bring to a boil for 15 minutes. Drain and pour the squash into a bowl. Add in the remaining butter, Parmesan cheese, alt, and pepper and mash everything. Serve the skewers with mashed squash and salsa verde.
